Fitness Trainer Lori Forrester is a big Paleo fan but even if the Paleo diet isn’t for you, this is a great protein snack to try as protein is so important when working out. It is her favorite go-to recipe for snack or breakfast!
1/2 C Stevia
1/2 C apple sauce (no added sugar)
2 tsp ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. ground clove
1 tsp. baking soda
1/2 tsp salt
2 tsp. vanilla extract
4 large egg whites
1-15oz. can raw pumpkin (not pumpkin pie filling)
2 C almond flour (can also use coconut flour or a mix of both)
2 scoops vanilla whey protein
1/2 C almond milk
1/2 chopped walnuts (optional)
1. Preheat oven to 350
2. Spray a 9 x 13 Pyrex dish with non-stick spray
3. Combine first 11 ingredients and mix well
4. Add the final 3 (4 if walnuts) and mix until incorporated. Spread batter into the dish and bake for 30 min.
5. Makes 24 squares
