Smoked Halibut Tostada / smoked halibut mousse, avocado, aji amarillo, caviar
Parsnip Agnolotti / leek and kohlrabi foam, truffles, Satsuma preserves, herb oil

Poached Halibut / 24-hour soubise, bok choy salad, mushroom crust, pearl onion
